CATA'S NOTES

Ruby red in color, it is clean and bright.

Present in the nose a great complexity and elegance; with toasted bottom, wet earth and smoke.

Its spicy and mineral aromas stand out in aftertaste. On the palate it is meaty and powerful, with sweet tannins.

SERVICE: We recommend serving it around 16ºC.

DESIGNATION OF ORIGIN: Alicante

AGING: 18 months in new French oak barrels.

VARIETIES: Petit Verdot - Merlot - Syrah

VINEYARD: Located at 650 meters of altitude in the "Finca La Serrata", Villena-Alicante.

SOIL: Sandy soils with high permeability and low salinity.

HARVEST: Each variety is harvested separately, as they have different maturity points. Night harvest is carried out mechanically, thus avoiding oxidation and high daytime temperatures.

PREPARATION: Elaboration of each variety separately in stainless steel tanks, fermentative maceration for 2-3 days between 8-10º C, then leaving the native yeast to ferment for more than 15 days, not exceeding 28º C. Once finished The base wine is aged for a long time in barrels of different woods and degrees of toasting that give our wines their character, flavor and aromas.
