CATA'S NOTES

Intense cherry red color, we can appreciate violet edges and nuances. With a high and covered coat, it is clean and bright.

On the nose, the aromas of ripe red fruit stand out, which are linked with spicy and balsamic notes.

Tasty and intense, in the mouth it is powerful; Ripe tannins appear which causes this wine to have a great final persistence.

SERVICE: We recommend serving it around 14ºC.

VARIETIES: Merlot - Petit Verdot

VINEYARD: Located at 650 meters of altitude in the "Finca La Serrata", Villena-Alicante.

SOIL: Sandy soils with high permeability and low salinity.

HARVESTING: Each variety was harvested separately, as they have different maturity points and thus can express their maximum fullness. Night harvest is carried out mechanically, thus avoiding oxidation and high daytime temperatures.

PREPARATION: Elaboration of each variety separately in stainless steel tanks, after a cold maceration for 2-3 days at 8 / 1º C, we let the native yeast ferment for more than 15 days, not exceeding 28º C.
