The Malagueña goat is a unique species, predominantly dairy, which also has a meat with exceptional conditions. The Malagueño Suckling Goat is the first Spanish goat breed associated with a quality brand.

The herds graze on Mediterranean bushes such as rosemary or thyme, which favors a meat with very healthy conditions. The kids, fed exclusively on breast milk, have pinkish meat with low levels of fat, concentrated mainly in the visceral area, this being an easily dissolved fat. It is also a great natural source of iron, as well as proteins of high biological value.

We season our Lechal Goat with Extra Virgin olive oil, salt, pepper, garlic, parsley and a light touch of lemon and place it in the wood-fired oven for three hours over low heat.

Using excellent quality products, together with the heat produced by the olive wood, makes it possible for us to obtain one of the best traditional roasts. Baked Goat from Canillas has tender, pinkish-colored meat, juicy interior and toasted skin.

Tasting this exquisite roast is very simple, since it is a fully cooked product which only needs to be heated. After tempering the bag (heating for 3 minutes in the microwave or under hot water), spray the product with the oil from the bag and after preheating the oven to 200º, heat for 15-20 minutes until it is completely golden.
