The vast majority of breeders work with mixed-breed Iberian pigs, the result of the union between purebred Iberian pigs and Duroc pigs. They are selected for their greater productivity but give rise to flavors and aromas different from those of the 100% Iberian pig. Monteparra has selected, specimens of pure Iberian breed and has a team of veterinarians and agricultural technicians who are exclusively dedicated to the study, care and control of the animal: the 100% Iberian pig. The black labeling endorses the product as 100% Iberico de Bellota and, therefore, it is also a guarantee of excellence and quality. Only products marked with the black label can be called black paw.
