The Limited Series is elaborated with the selection of the LARGEST CALIBERS of Bocarte / boquerón selected in the catches of ALBA acquired in the seaports of the Bay of Biscay in the months of April and May, moment in which the Bocarte / Boquerón reaches its maximum quality for the elaboration of the Salting, which will be cured in the cellar for an average of one year. Later it is elaborated in appetizing fillets in a totally handmade way where only a few expert Cantabrian fillet hands will be able to pamper them and elaborate them in small LIMITED PRODUCTIONS where the MAXIMUM QUALITY will prevail over the quantity. Finally, they will be embraced by one of the best AOVEmedalla of gold to the best oil in the world in 2012, 2013 and 2015 that will make a perfect match for the most demanding palates.
